Break the boiled potatoes into big pieces.
Heat oil in a pan and add mustard seeds. Allow mustard seeds to crackle.
Add chopped onion and fry till it turns pink in color.
Add ginger garlic paste and fry for 30 seconds on low flames.
Add dry spices turmeric powder, coriander powder, cumin powder and salt. Fry for a while.
Add mashed potatoes and mix the spices well. Cook for 2 minutes.
Add mango powder and mix well.
Aloo chokha is ready. Garnish with chopped coriander leaves.
Serve it hot with chapati / paratha.
