How to Make Karnataka Sambar
Wash toor dal and soak in water for 2 hours.
Take a pressure cooker and add dal along with 2 cups of water and salt. Add turmeric powder as well. Boil dal in pressure cooker for two whistles.
Heat 1 tsp of oil in a pan and add mustard seeds. Allow them to splutter.
Add cumin seeds, coriander powder, fenugreek seeds and mix with the coconut paste. Grind the paste again.
Heat rest of the oil in a kadhai and add curry leaves, When curry leaves are done, add chopped vegetables. Add tamarind pulp and sugar.
When vegetables are cooked add coconut and spices paste and cook further.
Now mash the boiled dal and add it in the kadhai. Cook it covered for 10 - 12 minutes on low / medium flames.
Adjust the salt and garnish with chopped coriander leaves.
Sambar is ready. Serve it hot with rice. dosa or idli.
