Boil the Capsicum Bells in water for 5 -7 minutes on low/ medium flames. Drain the water and let them cool. Meanwhile boil the potatoes, peal off and mesh when potatoes are cool. Keep the green peas in boiling water for 2-3 minutes.
Heat a tsp of oil in pan and add onion, fry it till it is golden in color. Now add Cumin seeds and let them crackle. Now add turmeric, salt and green Chillies. Add meshed potatoes and peas. Add salt to taste. Fry them for 4- 5 minutes on low flames. Once it is cooked, sprinkle garam masala and amchoor (mango powder).
Now take the boiled capsicum bells and cut the top (stem). Take out all seeds from inside the bells and can mix it with the stuffing of potatoes. Fill the empty capsicum bells with the stuffing.
Now heat 2 tsp of oil in the pan, and fry the stuffed capsicum bells by rolling it on the pan, so that all sides of the capsicum is fried. Garnish it with chopped corainder leaves and serve.
